The Best Sloppy Joe’s

By: Amber Grangroth

Sloppy Joe’s are delicious any time of year! Add a side of crunchy potato chips to clean up the slop or a side salad and you’ve got a meal!

You can use ground beef, venison, or turkey, or a combination, whichever you prefer.

I like to add finely chopped carrots and riced cauliflower for some extra veggies and to help stretch the meat just a little farther. The carrots add a touch of sweetness and the cauliflower adds no noticeable taste. It can get expensive feeding a large family so i’m always looking for healthy and delicious tricks that are budget friendly and this is one of them!

I served these Sloppy Joe’s on homemade buns but any bun of choice will also work.

Sloppy Joe’s Recipe
2 lbs ground beef or turkey

1 medium onion finely diced

3-4 carrots finely chopped

1 lb bag riced cauliflower

1-1 1/2 cups ketchup

1/2-2/3 cup BBQ sauce of choice

2-3 Tbsp mustard

2 Tbsp apple cider vinegar

1/2 cup brown sugar

3/4 cup water

1 tsp onion powder

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

Instructions:
1. Brown meat with onion and carrots, add riced cauliflower and stir to combine.
2. Add remaining ingredients and mix well, simmer 20-30 minutes stirring occasionally until veggies are soft. Add a splash of extra water as needed if there’s not enough liquid and the veggies are still hard.
3. Serve hot on a bun!

Enjoy!
