Peach Crisp

By: Amber Grangroth

It is that time of year when grocery stores are stocked with sweet juicy peaches, and fruit trucks are making stops selling them by the boxes!
If you can get some fresh peaches, you need to make this delicious Peach Crisp. You don’t need an occasion. It’s peach season, and that is reason enough to have warm Peach Crisp topped with Vanilla Ice Cream on a Monday night!
There are so many different ways to use fresh peaches, in yogurt, smoothies, on top of pancakes or waffles, simply eating them because they are just so good, grilling them and topping with ice cream, canning, peach preserves, I could go on..
I had some peaches that weren’t perfect for eating, but that doesn’t matter once they are mixed with cinnamon and sugar, topped with crisp and baked into a delicious treat! So if you have a few that have shriveled a little or have bruises, you can still use them!
I prefer to peel the peaches first, but you can leave the skins on. It’s simply a texture difference. So do what you’d like. I like to peel with a knife when I’m not doing a large quantity. But you can blanch the peaches in boiling water until the skin cracks and then drop in ice water, and the skins will peel right off.
This recipe freezes great! Simply put in the freezer unbaked covered in foil and plastic wrap. Remove wrapping and place in the oven while it is preheating. Bake for about 60-75 min until bubbly and hot in the center.
