Bacon Wrapped Jalapeño Poppers

Bacon Wrapped Jalapeño Poppers are absolutely delicious! First off, who doesn’t love bacon! Anything wrapped in bacon makes it ten times better!

I love a little heat! And that’s exactly what these had! The heat of the jalapeños mixed with the creaminess of the cheese and the salty, crispy bacon! Yum!

We have four jalapeño plants in the garden this year. I used our home grown jalapeños to make these which makes them even more fun! I sent the three year old to pick some fresh chives to go inside too! He loves picking things from the garden and knows exactly where each thing is!

These make a great appetizers for a dinner party or addition to a potluck. Or just a Friday night!

Let’s make Jalapeño Poppers!

Bacon Wrapped Jalapeño Poppers

Ingredients:
12 – 14 jalapenos

8 oz room temperature cream cheese

1/2 c shredded sharp Cheddar cheese

2 T chopped chives

I 12-16oz pack of bacon

Directions:
1. Wash the jalapeños and remove the tops and seeds. Cut in half length wise. Wear gloves if you wish to prevent your hands from burning. I took the risk!

2. Place cream cheese, cheddar cheese, and chives into a bowl and mix to combine with the back of a spoon.

3. Stuff each half of the jalapeños with the cheese mixture.

4. Wrap in bacon. I used half pieces of bacon for most. But if the jalapeños are larger, you may need a full piece or slightly less. If there’s extra bacon, fry it up and eat it!

5. If using the oven, preheat to 400°F and place poppers evenly on a baking sheet. Bake for 25 minutes. If using a smoker, smoke at 150 for 10 min, then crank up to 400 and finish them off for 20 minutes.
