Hearty Hamburger Soup (gluten and dairy free)

I love a soup with a smooth rich broth and Hamburger Soup is just that! With loads hamburger, herbs, veggies and a touch of tomato paste, this soup is hearty and delicious to warm you up on a cold winter night or a rainy summer evening!
It pairs perfectly with a thick slice of homemade bread, sourdough Dutch oven bread is my preference. But any good bread is delicious with soup, especially if it’s spread with butter!
Feel free to use ground turkey, sausage, venison, or any combination of ground meat you have!
Swap out the green pepper for another bell pepper if that’s what you have. Frozen would work just as well if you freeze peppers in the summer to use all winter long. Or get some from the freezer section at your grocery store, no shame in saving a little time when necessary!
Any type of potato will work. Yukon gold potatoes or red potatoes don’t need to be peeled, but be sure to give them a scrub. If you’re using potatoes with thick skin such as a Russet, then it’s best to peel it!
Use whatever kind of broth you have, homemade, or store bought. Except maybe a fish broth.. that one might not be the best. But chicken, beef, turkey, venison, they’re all delicious!
Hearty Hamburger Soup (gluten and dairy free)
Ingredients:
2-3 Tbsp oil or tallow
1 medium onion, chopped
2 stalks celery, chopped
3-4 large carrots, peeled and chopped
1 green bell pepper de-seeded and chopped
5-6 medium red potatoes diced
8 cups broth
2 bay leaves
2 tsp salt (more if your broth has low salt)
1 tsp pepper
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 1/2 tsp dried oregano
2 tsp dried basil
2 tsp dried parsley
2 lbs ground meat
6oz can tomato paste
Instructions:
In a large soup pot or Dutch oven, add oil, and brown meat.
Add onion, celery, carrots, and bell pepper and sauté over medium heat until tender.
Add in potatoes, broth, seasonings, and tomato paste and bring to a simmer, cover, and simmer until all veggies are soft, mixing occasionally to prevent sticking.
Remove bay leaves before serving.
Enjoy!
