Bourbon Chicken (gluten free)

Bourbon Chicken is an all-time favorite around here! Tender flavorful chicken that’s been simmered in sauce until it nearly falls apart, then placed on top of a bed of rice or cauliflower rice for a low carb option. Yummmmmy!!

We like to enjoy Bourbon Chicken with a steamed veggie such as green beans or broccoli. Any veggie would be good! A garnish of green onions or chives would be perfect but not necessary!

This is easily made gluten free if you substitute the soy sauce for coconut amino. The brown sugar can also be swapped out for honey if you prefer not to use refined sugars.

A bit of cayenne pepper adds a perfect bit of spice if that’s your thing. I usually leave it out of the main dish but add a little dash to my own!

Any cut of boneless skinless chicken can be used but we prefer boneless skinless chicken thighs, it has a little extra fat and makes the most delicious, fork tender, Bourbon Chicken!

Bourbon Chicken (gluten free) Recipe

Ingredients:
2-3 lbs chicken breast
2-3 Tbsp oil
3 clove garlic
1/2 tsp ginger
1/4 – 1/2 tsp cayenne (optional)
1/3 cup apple juice
1/3 cup brown sugar or 1/4 cup honey
3 Tbsp ketchup
1 1/2 Tbsp apple cider vinegar
2/3 cup water
1/2 cup soy sauce or coconut aminos

Directions:
Heat oil in a large skillet, cut chicken into bite-sized pieces, and add chicken to the pan. Cook, while stirring occasionally until lightly browned. The chicken does not need to be cooked through.

Mix together the remaining ingredients for the sauce and pour into the pan with the chicken.

Heat over medium-high heat until well mixed and sugar is dissolved. Reduce heat and simmer for 20 min until chicken is tender and sauce has thickened.

 Serve over hot rice or cauliflower rice!
