Homemade Mayonnaise

Homemade mayo is so quick and easy to whip together and can be used in all your favorite homemade dressings and sandwhiches!
I love to mix some with hard-boiled eggs for egg salad or with the yolk to make deviled eggs. It’s also delicious mixed with chicken to make chicken salad or tuna to make tuna melts!
Why should you make mayo? If you’re looking for a healthier version of mayo that doesn’t have 20 ingredients, this is a very inexpensive way to have clean mayonnaise.
Using only a handful of ingredients that you probably have on hand already, and an immersion blender or high-powered blender to ensure it emulsifies or gets thick.
If your mayo doesn’t thicken, place another raw egg yolk in a clean jar or blender, begin to blend and very SLOWLY begin to pour the runny mayo into the jar. Do this even slower than you think you should. It should then thicken.
Then, make yourself some chicken salad with walnuts, apples, and grapes and throw it on a bed of greens! Yum!!!
Homemade Mayonnaise Recipe
Ingredients:
1 egg yolk
1 Tbsp mustard
1 Tbsp vinegar/lemon juice
1 Tbsp water
1-1/3 cup olive/avocado oil
Instructions:
Place all ingredients except oil in a mason jar and blend with an immersion blender.
Slowly pour in the oil while very slowly pulling up the immersion blender until thick and creamy.
Enjoy!
