Banana Bread

Banana Bread is sweet, perfectly moist and pairs great with a cup of coffee!
Banana Bread reminds me of my childhood. It is the first quick bread I learned to make. We always made it when we had a few over ripe bananas and my job was to mash them. Now my boys like to help me make Banana bread, and the older ones can make it without my help.
This recipe makes either two loaves or two dozen muffins. I like to make muffins to have in the freezer for a busy morning breakfast or snack to take along when we go somewhere.
I use butter and applesauce in this recipe, if you don’t have applesauce you can do 1 cup of butter instead and if your trying to stay away from butter you can do all applesauce. The texture will be slightly different but still good either way! I use cows milk but you can use any milk of your choice.

Chocolate chips and nuts are great additions to change up the texture and flavor! Either mixed in the batter or sprinkled on top before baking.

Banana Bread Recipe

Ingredients:
1/2 c butter, partially melted
1/2 c applesauce
1 1/2 c sugar
4 eggs
2 c ripe bananas, mashed
2 t vanilla
1 c milk
4 c flour
2 t baking soda
1 t salt
1 c chocolate chips (optional)
1 c walnuts chopped (optional)

Directions:
1. Preheat oven to 350°F. Grease two 9 inch loaf pans or 24 muffins.
2. In a stand mixer or a large bowl with beaters cream the butter and sugar.
3. Mix in applesauce, eggs (one at a time), bananas, vanilla, and milk.
4. Add flour, baking soda and salt to the bowl and mix well. If mixing in chocolate chips or nuts add them at this time.
5. Pour into greased pans. If you want the chocolate chips or nuts only on top Sprinkle on at this time.
6. Bake at 350°F for 60-70 minutes until a fork comes out clean when poked. Bake muffins for 20-25 minutes. Cool on wire rack.
