Best Ever Waffles

When we lived up in Northern Minnesota, it became a Sunday morning tradition for my husband to make waffles. He came up with the perfect recipe for light and fluffy and perfectly delicious waffles!
They are great topped with butter, berry sauce, maple syrup, peanut butter, fruit, yogurt and whipped cream.
Any extra batter can be refrigerated and cooked up in the next day or so. It may need to be gently mixed if it separates a little but don’t over mix. You don’t want to lose the fluffy consistency. Or you can make all the waffles and freeze for a quick breakfast on a busy morning!
I like to add a little whole wheat flour when I make them just for some extra nutrients. But my husband makes them with all white flour. He adds a touch of cinnamon, which creates a great warm flavor!
That tradition has died off now that Sunday mornings are busy getting everyone out the door for Sunday School. I don’t make waffles often because they take longer to mix up than pancakes. But when a birthday boy asks for waffles for his birthday breakfast, he gets waffles! And all the kids cheer!
Best Ever Waffles Recipe
- 5 eggs, separated
- 2 2/3 cup milk
- 2 2/3 cup all purpose flour
- 2 Tbsp granulated sugar
- 3 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 tsp vanilla extract
- 1/2 cup butter, melted
- In two large bowls, separate the eggs, placing egg yolk in one bowl and egg white in the other.
- Add milk to the bowl with the egg yolks and mix well.
- In a separate bowl, combine flour, sugar, baking powder, salt, and cinnamon.
- Stir the dry ingredients into the milk and egg yolk mixture. Add vanilla and melted butter and mix well.
- Beat egg whites until stiff peaks form. Pour into the waffle batter and gently fold into the batter.
- Fry in a preheated Waffle iron and top with your favorite waffle toppings!!
