The Best Blueberry Oven French Toast

This Blueberry Oven French Toast is so good! Often, the oven French toast is so sweet and heavy and makes you feel like you just ate dessert for breakfast. Not this one! It’s sweetened only with honey and uses a few basic ingredients to make it a healthier twist on oven French toast.
I don’t like to waste food so I save my bread ends or dried pieces and freeze them when I have a big stash I cut them up to make croutons, oven French toast or stuffing at Thanksgiving. Or I put the bread in my food processor and make bread crumbs to add to meatloaf or meatballs.
This Blueberry Oven French Toast pairs great with an egg bake for a special morning brunch. Make it ahead, place it in the fridge overnight and bake in the morning. You can also bake it the day before and reheat for quick morning breakfast before school or work.
Top it with maple syrup, whipping cream, yogurt or any topping of your choice! Enjoy!
Blueberry Oven French Toast Recipe
Makes 1 9×13 pan
- 12 slices of bread cubed
- 8 eggs
- 1 1/2 cup milk (use unsweetened almond milk for dairy free)
- 1/4 cup honey
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 2 cups frozen blueberries
Directions:
- Grease 9×13 baking dish
- Cut bread into 1″x1″ cubes and place into the prepared baking dish. Sprinkle with cinnamon and blueberries
- Crack eggs into a large bowl, add milk, vanilla and honey. Whisk well until combined
- Pour over bread cubes in pan. Cover and place in refrigerator for at least 4 hours or overnight.
- When ready to bake, preheat oven to 350°F. Bake for 30-40 minutes until no liquid is left in the middle.
- Serve warm topped with pure maple syrup, whipped cream, fruit, or yogurt. Yum!!
