Chewy Gingerbread Cookies

I wish you could smell my house right now! The warm cinnamon, ginger, and molasses just smell like Christmas! These Chewy Gingerbread cookies are a family favorite that we only make at christmas time! My husband loves to add a little scoop of vanilla ice cream on top of a cookie. Try it! What’s not to like?

You can roll these cookies in brown sugar before baking and leave them as is, or bake, and then drizzle icing over them after they cool. I love the look of icing drizzled over cookies. They look so festive! Each one is a little different and beautiful in its own unique way.

Chewy Gingerbread Cookie Recipe

Ingredients:
1 1/2 c butter
2 c brown sugar
2 eggs
1/2 c molasses
4 c flour
2 t cinnamon
1 1/2 t cloves
1 1/2 t ginger
1/2 t salt
2 t baking soda

Directions:
Preheat oven to 350° fahrenheit
In a large bowl, combine flour, cinnamon, cloves, ginger, salt, and baking soda. Mix well.
In a large bowl with a hand mixer or a stand mixer, cream softened butter and brown sugar until light and fluffy.
Add eggs and molasses and mix well.
Slowly add the flour mixture. Mix until fully incorporated
Scoop and roll in brown sugar, place on a baking sheet (If you would like to add glaze, do not roll in brown sugar)
Bake at 350° for 10 minutes
Once cooled, drizzle the glaze over the top if you would like
Cool completely and store in an airtight container. May be frozen for several weeks.

Glaze:
3-5 T milk or cream
2 c powdered sugar
1 t vanilla
Mix well until desired consistency, which can be drizzled with a spoon, if it is too thick, add a little milk, if it is too thin, add a little powdered sugar. Let cookies sit for several hours to set up.
