Fresh Salsa with Garden Tomatoes

Fresh garden salsa absolutely delicious! Spicy from the jalapeño, sweet tomatoes and that fresh cilantro. YUM!!
We love to grow tomatoes, peppers, and cilantro in our garden each summer. We whip up a batch of fresh salsa about once a week in August and September to enjoy with eggs, quesadillas, tacos, nachos, and just plain ol tortilla chips. It’s that good!
You don’t need fresh garden veggies to make this. You can use store bought veggies and make this any time of year!
I used orange and yellow tomatoes to make this batch. The green jalapeño and cilantro give if a greenish hue. You can use any color of tomatoes you have!
The recipe calls for one jalapeño. Depending on your heat preference, maybe start with half of a jalapeño or remove some seeds and membrane for a more mild salsa. If you’re really looking for a salsa with a kick add in two jalapeños, seeds, and all. Just remember to taste it and adjust to your spice preference. If it’s too spicy, add another tomato or two!
I like to make this salsa in a blender on low speed and blitz it until it’s to the desired consistency. Simply cut the stems off and cut the veggies into about quarters before placing them in the blender.
Add the juice of one lime, and a few generous pinches of salt and mix to combine. Taste it and adjust as needed.
Then try not to eat the while bowl in one sitting. Trust me, it’s difficult to stop once you start!
Fresh Salsa with Garden Tomatoes Recipe
Ingredients:
1 medium onion
1 jalapeño
2 garlic cloves
4-5 large tomatoes
Small bunch of cilantro
Juice of 1 lime
1/2-1 tsp salt
Instructions:
- Remove the stems from the jalapeno and tomatoes and cut into 4 pieces. Place them in the blender.
- Remove the ends and skin of one onion and discard. Cut the onion into 4 pieces and place them in the blender.
- Add garlic cloves, cilantro, salt, and lime juice and blend on low-medium until desired consistency.
- Taste and adjust as needed.
- Enjoy!
