Krispy Peanut Butter Balls

Krispy Peanut Butter Balls are sweet and delicious, the perfect addition to any cookie tray! These no bake treats are so easy to make that my boys could follow this recipe. They had them all done in an evening and were licking the extra chocolate off their fingers. We love peanut butter, and when combined with chocolate its even better!

The crushed rice krispies add the perfect little crunch to each bite and the semi sweet chocolate chips add just the right amount of sweetness. Feel free to experiment with white, dark, or even milk chocolate. And add any garneshes on top that you’d like before the chocolate hardens. Some ideas would be crushed heath, drizzle a different kind of chocolate over the top, crushed pretzles, sprinkles, or flaked salt.

If you find you have extra chocolate when you’ve covered all your peanut butter balls, pull some fruit or pretzles out and use up the rest for a little extra treat! My boys made some chocolate covered blueberries with the leftover chocolate. Yum!!

Krispy Peanut Butter Balls Recipe

Ingredients-
2 cups peanut butter
½ cup butter softened
2 cups powdered sugar
4 cups rice krispies slightly crushed
4 cups semi sweet chocolate chips
4 Tbsp coconut oil

Directions:
In a large bowl with a hand mixer or a stand mixer, combine peanut butter and butter until smooth.
Add powdered sugar 1 cup at a time. Mix well.
Slowly add rice krispies until fully mixed.
Scoop into 1 inch balls with a small cookie scoop or a spoon, rolling gently between your palms. Place on a baking sheet lined with parchment paper and chill for at least 30 minutes.
In a microwave safe bowl, add chocolate chips and coconut oil. Heat in the microwave for 1 minute, stir and continue heating for 20-30 seconds, mixing well in between heating until all the chocolate chips are melted.
Dip peanut butter balls into chocolate and carefully remove them with a fork and place back on the parchment paper. Repeat until all the peanut butter balls are covered in chocolate.
Place back in the fridge or freezer until the chocolate has hardened.
Store in a ZipLoc bag or air-tight container in the fridge for several days or freezer for several weeks.
