Amber’s Sandwich Bread

When I was 16, I begged my mom to teach me how to make bread. She baked bread 16 loaves at a time for the first half of the family, but for me, as the baby of the family, homemade bread was a treat! Anyway, she agreed to teach me how to make bread. We got the bread mixed up and set to rise, and I left to go hang out with my friends. My mom finished making the bread without me. She was a little bugged, and when I asked her for her bread recipe years later, she kindly gave it to me but stated I’d have to figure it out on my own! Tough love!

My first bread turned out like a brick! It didn’t take long, though, for me to get a hang of this whole bread making thing. I soon was baking bread like I’d been doing it all my life, changing up what i put in it and trying out several different kinds. I never thought when i left my mom in the kitchen all those years ago that someday I would love making bread. It makes me feel so domesticated and fills the house with the comforting smell of freshly baked bread. Who doesn’t love that?

Through many years of bread making, I eventually came up with my own recipe. Tho I still change up what I put in it from time to time. Either way It’s always delicious!

Amber’s Sandwich Bread

Makes 4 loaves
5 c warm water
1 T yeast
1/4 c sugar/honey
1/4 c oil
1 1/2 T salt
2 T chia seeds (optional)
1/4 c ground flax seeds
3 c rolled oats
3 c whole wheat flour
5 -6 c all purpose flour

Directions:
1. In a large bowl or mixer, mix water, yeast, sugar/honey, oil, salt, and chia seeds and flax seeds if using. If your not using chia and flax you’ll just need to add a bit more flour.
2. Add in oats and wheat flour. Gradually add all purpose flour until dough forms. Knead dough in a mixer if it is large enough or dump the dough out onto a floured surface and knead while adding remaining flour. Knead for 10-15 minutes until smooth and elastic.
3. Place dough back in the bowl and let rise until doubled. Punch down and let rise again until doubled.
4. Dump the dough out on to a lightly floured surface and divide into four equal parts. Form loaf rounds and let set for 15 minutes.
5. Form loaves and place in greased loaf pans or on a baking sheet. I sometimes divide one loaf into 12 buns and place in a 9×13 pan.
6. Let raise until doubled. Approximately 1 hour.
7. Preheat the oven to 350°F. Bake for 30 minutes until golden brown. Cool on a wire rack and store in an air tight bag.
