In a large bowl or mixer, mix water, yeast, sugar/honey, oil, salt, and chia seeds and flax seeds if using. If your not using chia and flax you'll just need to add a bit more flour.
Add in oats and wheat flour. Gradually add all purpose flour until dough forms. Knead dough in mixer if it is large enough or dump the dough out on to a flour surface and knead while adding remaining flour. Knead for 10-15 minutes until smooth and elastic.
Place dough back in the bowl and let rise until doubled. Punch down and let rise again until doubled.
Dump the dough out on to a lightly floured surface and divide into four equal parts. Form loaf rounds and let set for 15 minutes.
Form loaves and place in greased loaf pans or on a baking sheet. I sometimes divide one loaf into 12 buns and place in a 9x13 pan.
Let raise until doubled. Approximately 1 hour.
Preheat the oven to 350°F. Bake for 30 minutes until golden brown. Cool on a wire rack and store in an air tight bag.
