Amber's Sandwich Bread

Servings 4 loaves

Ingredients
  

  • 5 c warm water
  • 1 T yeast
  • 1/4 c sugar/honey
  • 1/4 c oil
  • 1 1/2 T salt
  • 2 T chia seeds optional
  • 1/4 c ground flax seeds
  • 3 c rolled oats
  • 3 c whole wheat flour
  • 5 -6 c all purpose flour

Instructions
 

  • In a large bowl or mixer, mix water, yeast, sugar/honey, oil, salt, and chia seeds and flax seeds if using. If your not using chia and flax you'll just need to add a bit more flour.
  • Add in oats and wheat flour. Gradually add all purpose flour until dough forms. Knead dough in mixer if it is large enough or dump the dough out on to a flour surface and knead while adding remaining flour. Knead for 10-15 minutes until smooth and elastic.
  • Place dough back in the bowl and let rise until doubled. Punch down and let rise again until doubled.
  • Dump the dough out on to a lightly floured surface and divide into four equal parts. Form loaf rounds and let set for 15 minutes.
  • Form loaves and place in greased loaf pans or on a baking sheet. I sometimes divide one loaf into 12 buns and place in a 9x13 pan.
  • Let raise until doubled. Approximately 1 hour.
  • Preheat the oven to 350°F. Bake for 30 minutes until golden brown. Cool on a wire rack and store in an air tight bag.
