Any Meat Will Do – Homestead Meatloaf

Meatloaf is one of those dinners that everyone goes back for seconds! A family favorite for sure! I can’t hardly make enough meatloaf. We are lucky if we get a serving or two of leftovers!
I use any type of ground meat or a combination of ground meat, turkey, beef, venison, or pork. Whatever you can find in the freezer. Note that the ground pork is just that, pork. Not seasoned sausage.
This recipe is a bit more of a guide depending on the amount of meatloaf you’d like to make. It’s completely customizable, dairy free and can be gluten free as well.

Use what you have on hand for the dry ingredients, from crushed crackers, homemade bread crumbs from those stale bread ends, oats or a combination. I like to pulse bread in my food processor to create bread crumbs. Oats are really quick to add if you are short on time.
I finely chopped onion, garlic, carrots and celery and saute until soft to add some veggies in! This is optional and if you only have onion you can just add that to. Like I said, its quite versatile!
I like to line the bottom of the pan with foil just for easy clean-up. Sometimes, the juices and fats burn on to the pan, and the foil makes it super easy to just roll it up and toss it in the trash.
Shortly before the meatloaf is done, remove it from the oven and drizzle with your favorite BBQ sauce. Then return to the oven for about fifteen more minutes to let the BBQ sauce set up some.
Slice and enjoy with some ketchup or more BBQ sauce. We like to have some sort of potato and a cooked vegetable along with it to make a well rounded comfort meal. Or make some homemade macaroni and cheese and a salad! Find my Simple Homemade Macaroni and Cheese recipe here.

t (any combination of beef, turkey, venison, pork, etc.)
1 egg
1/2-1 cup of oats, crushed crackers, or bread crumbs (you want the loaf to stick together, not too wet and not too dry)
1/4 cup of ketchup
2 Tbsp Bbq sauce (plus more for drizzling)
1-2 tsp mustard
1-2 tsp worcestershire sauce
1-2 tsp each of basil, oregano, salt, pepper, garlic powder and onion powder
2-3 tbsp oil or butter
1/2 medium onion
1/2 cup carrots
1 stalk of celery
2-3 garlic cloves
Instructions:
- Preheat the oven to 375 degrees Fahrenheit. Line a baking sheet with aluminum foil and set aside.
- Finely chop onion, carrots, celery and garlic and saute in oil or butter until soft, set aside to cool slightly.
- In a large bowl add ground meat, egg, bread crumbs, crackers or oats, ketchup, mustard, BBQ sauce, worcestershire, and seasonings.
- Add in the sauteed veggies and mix well with your hands
- Form a loaf on the baking sheet, or if making a double or triple recipe make 2 loaves, patting the meat mixture together.
- Place in the preheated oven and bake for 1-1 1/2 hours until the internal temp is at least 165 degrees Fahrenheit. Meatloaf made with 1 pound of meat will take about an hour while larger meatloaf’s will take longer to cook through.
- When the meatloaf is almost done, remove from the oven and drizzle with your favorite BBQ sauce. Return to the oven for about 15 minutes longer to let the BBQ sauce set up and caramelize.
- Slice and Enjoy with ketchup or BBQ sauce!
Note: This recipe can easily be doubled, tripled or quadrupled! Just simply multiply the recipe! If you don’t have all the veggies to saute, simply leave them out. Also, if you don’t have mustard or worcestershire sauce or some of the seasonings leave those out too. It will still be delicious!
