Any Meat Will Do - Homestead Meatloaf

Ingredients
  

  • 1 lb ground meat any combination of beef, turkey, venison, pork, etc.
  • 1 egg
  • 1/2-1 cup of oats, crushed crackers, or bread crumbs (you want the loaf to stick together, not too wet and not too dry)
  • 1/4 cup of ketchup
  • 2 Tbsp Bbq sauce plus more for drizzling
  • 1-2 tsp mustard
  • 1-2 tsp worcestershire sauce
  • 1-2 tsp each of basil,oregano, salt, pepper, garlic powder and onion powder
  • 2-3 tbsp oil or butter
  • 1/2 medium onion
  • 1/2 cup carrots
  • 1 stalk of celery
  • 2-3 garlic cloves

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit. Line a baking sheet with aluminum foil and set aside.
  • Finely chop onion, carrots, celery and garlic and saute in oil or butter until soft, set aside to cool slightly.
  • In a large bowl add ground meat, egg, bread crumbs, crackers or oats, ketchup, mustard, BBQ sauce, worcestershire, and seasonings.
  • Add in the sauteed veggies and mix well with your hands
  • Form a loaf on the baking sheet, or if making a double or triple recipe make 2 loaves, patting the meat mixture together.
  • Place in the preheated oven and bake for 1-1 1/2 hours until the internal temp is at least 165 degrees Fahrenheit. Meatloaf made with 1 pound of meat will take about an hour while larger meatloaf's will take longer to cook through.
  • When the meatloaf is almost done, remove from the oven and drizzle with your favorite BBQ sauce. Return to the oven for about 15 minutes longer to let the BBQ sauce set up and caramelize.
  • Slice and Enjoy with ketchup or BBQ sauce!

Notes

This recipe can easily be doubled, tripled or quadrupled! Just simply multiply the recipe! If you don't have all the veggies to saute, simply leave them out. Also, if you don't have mustard or worcestershire sauce or some of the seasonings leave those out too. It will still be delicious!
