Basic Carrot Cake with Cream Cheese Frosting

Every year for my hubby’s birthday, he requests carrot cake. This year he had four cakes on his list that he wanted me to make. I had to put my foot down, I wasn’t about to make four different cakes! He settled on carrot cake again and was it delicious!
This cake is filled with grated carrots, warm cinnamon and that cream cheese frosting on top just brings it all together!
Being I was making a birthday cake i decided to divide the recipe into two 9 inch spring form pans and make a layered cake. I adjusted the baking time slightly as well.
You can also make this cake in a 9×13 cake pan, and spread the frosting on top, if you don’t feel the need to get fancy! It tastes just as good!
This cake is great for birthdays, and Easter, which is coming up in a few short months! Who am i kidding, you don’t need a reason to make carrot cake! After all, it is vegetables!

Basic Carrot Cake with Cream Cheese Frosting Recipe
Ingredients:
2 cups all purpose flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
4 eggs
1 cup oil
2 cups sugar
2 1/2 cup grated carrots
1 tsp vanilla
Note: to make a 2 layer cake, divide cake batter into two 9 inch circular pans which have been greased and lightly floured. Reduce baking time to 35 minutes. Double the frosting recipe for the layered cake.
1. Preheat oven to 350 degrees Fahrenheit
2. Grease and lightly flour a 9×13 inch pan
3. Sift together flour, baking soda, cinnamon, and salt and set aside.
4. In a separate bowl with a hand mixer or in a stand mixer beat eggs for 1 minute.
5. Add oil to eggs and beat for 1 minute.
6. Add sugar to egg and oil mixture and beat for 2 minutes, add vanilla and stir.
7. Fold in carrots.
8. Fold half the flour mixture into the wet ingredients. Add the second half and beat for 1 minute.
9. Pour into prepared baking dish and bake at 350 degrees for 40-45 minutes until done.
10. Cool completely before frosting.
Cream Cheese Frosting:
1/4 cup softened butter
4 oz cream cheese at room temp
1 1/2 cup powdered sugar
1 tsp vanilla
Spread evenly over cake after it has cooled completely. Enjoy!
