Preheat oven to 350℉
Grease and lightly flour a 9x13 inch pan
Sift together flour, baking soda, cinnamon, and salt and set aside.
In a separate bowl with a hand mixer or in a stand mixer beat eggs for 1 minute.
Add oil to eggs and beat for 1 minute.
Add sugar to egg and oil mixture and beat for 2 minutes, add vanilla and stir.
Fold in carrots.
Fold half the flour mixture into the wet ingredients. Add the second half and beat for 1 minute.
Pour into prepared baking dish and bake at 350℉ for 40-45 minutes until done.
Cool completely before frosting.
