Method
- Preheat oven to 350℉
- Grease and lightly flour a 9x13 inch pan
- Sift together flour, baking soda, cinnamon, and salt and set aside.
- In a separate bowl with a hand mixer or in a stand mixer beat eggs for 1 minute.
- Add oil to eggs and beat for 1 minute.
- Add sugar to egg and oil mixture and beat for 2 minutes, add vanilla and stir.
- Fold in carrots.
- Fold half the flour mixture into the wet ingredients. Add the second half and beat for 1 minute.
- Pour into prepared baking dish and bake at 350℉ for 40-45 minutes until done.
- Cool completely before frosting.
Notes
Cream Cheese Frosting:
1/4 cup softened butter
4 oz cream cheese at room temp
1 1/2 cups powdered sugar
1 tsp vanilla
Spread evenly over cake after it has cooled completely. Enjoy!
Note: to make a 2 layer cake, divide cake batter into two 9 inch circular pans which have been greased and lightly floured. Reduce baking time to 35 minutes. Double the frosting recipe for the layered cake.
