Basic Carrot Cake with Cream Cheese Frosting

Ingredients
  

  • 2 cups all purpose flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 4 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 1/2 cups grated carrots
  • 1 tsp vanilla

Instructions
 

  • Preheat oven to 350℉
  • Grease and lightly flour a 9x13 inch pan
  • Sift together flour, baking soda, cinnamon, and salt and set aside.
  • In a separate bowl with a hand mixer or in a stand mixer beat eggs for 1 minute.
  • Add oil to eggs and beat for 1 minute.
  • Add sugar to egg and oil mixture and beat for 2 minutes, add vanilla and stir.
  • Fold in carrots.
  • Fold half the flour mixture into the wet ingredients. Add the second half and beat for 1 minute.
  • Pour into prepared baking dish and bake at 350℉ for 40-45 minutes until done.
  • Cool completely before frosting.

Notes

Cream Cheese Frosting:
1/4 cup softened butter
4 oz cream cheese at room temp
1 1/2 cups powdered sugar
1 tsp vanilla
Spread evenly over cake after it has cooled completely. Enjoy!
Note: to make a 2 layer cake, divide cake batter into two 9 inch circular pans which have been greased and lightly floured. Reduce baking time to 35 minutes. Double the frosting recipe for the layered cake.
