In a very large bowl or large mixer such as a Bosch, add warm water and yeast.
Add butter or oil. If using butter or coconut oil, melt before adding, but be sure it isn't too hot that it will kill the yeast.
Add honey and salt and mix well to combine
Begin adding several cups of flour and mix as you continue to add.
knead in a mixer or on a floured surface until smooth and elastic. If the dough is too sticky, add more flour a little at a time.
Place dough in a very large bowl and cover with a towel. Let rise until double.
Punch dough down and let rise until double again.
Dump dough out onto a floured surface and divide into 6 equal parts.
At this time, create round loaves with each portion of dough. If you would like to make buns, divide each portion into 12 buns.
Form loaves and place into greased bread pans, cover, and let rise until double.
Bake in a preheated oven at 350℉ for 30-35 minutes until golden.
Optional: brush loaves with butter before baking.
To make buns: place buns in a greased baking dish/baking sheet and let rise until double.
Bake buns at 350℉ for 18-22 minutes.
Cool on a wire rack and enjoy!
